An exotic duo - Autumn is just around the corner and yet with our recipe tip we bring back the summer for a few moments of enjoyment. Summer Rolls and Rosé Champagne - this duo takes you to exotic countries and reminds you of mild summer nights by the sea.
Serve the fresh, fruity Summer Rolls with an aromatic peanut dip or a fiery soy dip. A strong rosé champagne harmonizes wonderfully and completes this duo. Its intense bouquet is best developed in RIEDEL Performance Pinot Noir Glass.
INGREDIENTS FOR THE SUMMER ROLLS:
80 g rice noodles, 1/4 red cabbage, 2 carrots, 1/2 cucumber, 1 mango, 1 avocado, 8 sheets rice paper, mint, parsley, 1 tsp sesame & chia seeds
PREPARATION OF THE SUMMER ROLLS:
Cook the rice noodles according to the instructions on the packet. Soften rice paper in a flat bowl filled with water until it is transparent. Do not leave it in the water for too long, otherwise it will stick together. Place the rice paper on a work surface, sprinkle with sesame and chia seeds, cover with the different vegetables, avocado, mango, rice noodles, mint and parsley and roll up.
INGREDIENTS FOR THE PEANUT DIP:
1 clove of garlic, 1 small piece of organic ginger, 2 tbsp soy sauce, 2 tbsp maple syrup, the juice of a lime, 3 tbsp peanut butter, 30 ml water
PREPARATION OF THE PEANUT DIP:
Peel garlic and ginger and cut into fine cubes. Put all ingredients into a blender and mix to a smooth paste.
INGREDIENTS FOR THE SOY SAUCE DIP:
1 large clove of garlic, 1 red chilli, 5 tbsp soy sauce, juice of 1/2 lime, 1-2 tsp sugar, ground pepper
PREPARATION OF THE SOY SAUCE DIP:
Peel the garlic and cut into small pieces. Wash the chilli and chop finely. Mix garlic and chilli with soy sauce and lime juice. Season to taste with pepper and sugar.
