La décantation par choc est une méthode rapide et vigoureuse d'aération du vin qui consiste à le verser avec force dans une carafe ou entre deux récipients pour l'exposer à l'oxygène. Cette méthode permet d'ouvrir rapidement les vins jeunes et serrés, d'assouplir les tanins, de rehausser les arômes et de révéler des saveurs plus profondes, sans l'attente d'une décantation traditionnelle.
La double décantation consiste à aérer le vin deux fois - une fois au moment de le verser dans la carafe et une autre fois au moment de le servir.
