Our Sommelier of the Month for June 2018 is Fabrizio Canino, Head Sommelier at MNKY HSE in London. Fabrizio has very kindly answered a selection of questions which are below along with his response.
How did you get into the wine industry?
When I was in Italy I was working in my wine bar and decided to come to London to learn more about new and old world wines.
Why do you enjoy using Riedel glassware within your restaurant?
I personally like to use Riedel because it is not boring, I mean whether you are in a classic or vibrant place the glassware is still cool whilst being elegant at the same time.
What reactions do you get from customers when you serve their wines in different varietal specific glasses?
The reaction is always good! Whenever we change the glasses from Riesling to Bordeaux or Burgundy the customers say “now we’re talking” or some of them relate the glass to an expensive wine even if its not.
What has been your greatest wine experience to date?
Best experience... everyday is an experience for me, it is making people happy with a wine I have suggested and then them being thankful for the different things they have discovered. For me, wine is an experience.
What has been your biggest wine faux pas?
Drinking wine and coke in Spain, it is a combination called calimocho.
