Our Sommelier of the month for February 2015 is Elvis Ziakos, who is the Assistant Head Sommelier at The Greenhouse.
Elvis has very kindly answered a selection of questions which are below along with his response.
How did you get into the wine industry?
I have worked in the culinary industry in various capacities since the age of 16, and ultimately decided to devote myself completely to wine. I wished to develop my career within a field I loved - wine is my passion and a way of life.
Why do you enjoy using Riedel glassware within your Restaurant?
We are dedicated to delivering epicurean excellence to our guests and there is nothing to rival Riedel products. Riedel's glassware complements our classic/avant-garde food philosophy to perfection.
What reaction do you get from customers when you serve wines in different varietal specific glasses?
The Greenhouse has the biggest wine list in the UK, and our guests' unique experience is only improved by the variety and the quality of glassware, which serves to improve the flavours and aromas of the wine.
What's been your greatest wine experience?
I have had a number of incredible wine experiences, as a result of my career. I was also lucky enough to attend a workshop a couple of years ago in Athens with Mr Riedel, where we were trying to find a glass for a native Greek grape variety Malagouzia. It was a great experience, which helped to develop my palate further.
What's been the funniest wine moment in your career?
Wherever there is wine, there will always be laughter!
What's been your biggest wine faux pas?
Years ago, I accidentally broke a Riedel Amadeo, which was devastating as the decanter was a particularly fine one.
