A passionate wine connoisseur, Stephen Blevins is the National Director of Wine for Fleming’s Prime Steakhouse & Wine Bar, where he is responsible for Fleming’s beverage program. He brings over a decade of experience in the wine and spirits business, holding a 1st Level Certificate with the Guild of Sommeliers and earned his WSET Level 2 Award in Wine & Spirits with Distinction.
Stephen believes a great steakhouse is all about delivering a unique and elevated dining experience through the combination of delicious food paired with the perfect glass of wine - which is why all wines are served from RIEDEL glassware!

MATCH 1: Bone-In Ribeye & Bordeaux Blend
There is really no better pairing than a perfectly prepared bone-in ribeye and Vérité La Joie.
The juicy and luscious marbling that is famous in a ribeye is the perfect match for the structured tannins and balanced acid in the 2012 Vérité La Joie Bordeaux Blend.

MATCH 2: Filet mignon & Chardonnay
When it comes to pairing wine and food, I think that one of the most important and often forgotten considerations is to just drink the wine you love. Adjusting the seasoning and acid of a dish you are enjoying can really make almost any wine pair nicely with most foods. I love a classic filet mignon seasoned with salt and pepper served alongside oven-roasted tomatoes paired with a lean and fruit-driven chardonnay.
There are great chardonnays from California, Oregon and Australia that would be a perfect match. The addition of the soft and roasted acid in the tomatoes offers a truly balanced pairing. If you want to explore a French Chardonnay, a white Burgundy is another great choice that would pair well with this dish combination.

MATCH 3: BURGER & SHIRAZ OR ZINFANDEL
A great burger might be one of my favourite guilty pleasures, and what is a guilty pleasure without the perfect glass of wine to enjoy it with!
When it comes to burgers, I usually reach for a Shiraz or a California Zinfandel to drink alongside it. The bursting fruit and spicy characteristics of these two varietals is always a winning combination.

An approachable fruit-forward merlot is a beautiful culinary match for decadent chocolate.
