As the days get shorter and the nights colder, the time has come for something with a bit more warmth. All kinds of soups bring back cosy heat and are perfect after an extended walk in the fresh air. In addition to meat broths and vegetable broths, cream soups are very popular. The classic creamy pumpkin soup is a true favourite of us. Here's the recipe:
Recipe for 5 people
Preparation time: 40 minutes
Ingredients: 250 g of pumpkin (Hokkaido), 1 medium sized onion chopped, 2 tbsp of butter, 0.7 l of strong vegetable stock or beef soup, 0.25 l of cream, salt, pepper
Preparation: Peel the pumpkin, remove the core and cut into rough cubes. Sauté chopped onion in butter and infuse with a strong vegetable stock or beef soup. Add the pumpkin and cook until tender (approx. 20-30 min.), then mix everything thoroughly, refine with cream and season with salt and pepper.
Tip: Serve with roasted pumpkin seeds and/or Styrian pumpkin seed oil.
