Ingredients:
- 175 ml oil (e.g., sunflower oil)
- Salt
- 25 ml truffle oil
- 1 tbsp lemon juice
- 3 egg yolks Pepper
Preparation:
- Place the egg yolks in a mixing bowl and beat with a hand mixer for 3 minutes until foamy.
- Let the mixture rest for about 2 minutes. Then, gradually add the oils drop by drop while continuing to mix on the highest setting with the hand mixer until a creamy mayo forms.
- Season with salt, pepper, and lemon juice. Tip: Try using ground mustard as a seasoning!
- Serve with French fries.

Chili Lime Dip
Ingredients:
- 2 egg yolks
- 50 ml corn oil (alternatively, you can use 80 g (1/3 cup) mayonnaise instead of egg yolks and oil)
- Zest of 1 lime
- 2 tbsp freshly squeezed lime juice
- 1 tsp sweet paprika powder
- 1 tsp hot paprika powder
- 2 tsp tarragon mustard
- 1 tsp cognac
- A bit of fresh chili
- Black pepper
- Fleur de sel
Preparation:
- Beat the egg yolks with a hand mixer until foamy. While the mixer is running, slowly add the oil to the yolks. Continue mixing until the mayonnaise is thick and creamy, which takes about 10 to 15 minutes.
- To the finished mayonnaise, add salt, pepper, lime zest, lime juice, chili, paprika powders, and mustard. Gently stir to combine.
Homemade Potato Chips
Ingredients:
- 4 waxy potatoes
- 3 tbsp olive oil
- 1 pinch of salt
- 1 pinch of pepper
- 1 tsp paprika powder
- 1 tsp brown sugar
- 1 pinch chili powder
- 1/2 tsp garlic powder
Preperation:
- Wash the waxy potatoes and slice them thinly with the skins still on.
- Place the potato slices in a bowl, mix with olive oil, and season with paprika powder, brown sugar, chili powder, salt, pepper, and garlic powder. Toss well to coat.
- Arrange the seasoned potato slices in a single layer on a baking sheet lined with parchment paper and bake in a preheated oven at 175°C (350°F) for 30 minutes.
