Our Sommelier of the Month for May 2018 is Rhys Turner at Monachyle MHOR. Rhys has very kindly answered a selection of questions which are below along with his response. Thank you to Melanie Lewis at Melanie Lewis Photography & Design for the photograph of Rhys.
What is your industry background?
I started out in the hospitality industry when I was 15 and since then I have worked for a number of different businesses, one of which was a luxury super yacht in the South Pacific and it was here that I really discovered my love of wine.
Why do you enjoy using Riedel glassware within your restaurant? What reaction do you get from customers when you serve their wines in different varietal specific glasses?
My wine of choice is an Australian Shiraz and the Riedel Restaurant Syrah/Shiraz glass is beautifully elegant and perfect match for this bold, fruity style of wine.
The Tyrol decanter is a showstopper and never fails to draw comments from guests. It’s large surface area allows those older vintages to really open up and maximize their true potential.
What is your best experience in your role to date? And do you have a favourite food and wine pairing?
In 2017, I was fortunate enough to be invited to Champagne to enjoy the Ruinart experience, which was truly breathtaking. On our first night, we attended the Maison for dinner, where a local Michelin starred chef prepared a five-course dining experience with matched vintage Ruinart. Of course, all of the wines were served in stunning Riedel Champagne Glasses and it was a match made in heaven.
My favourite food and wine match would have to be The Lane Reunion Shiraz, 2010, accompanied by haunch of venison, with braised shin, garden carrots, kale and a celeriac and rooster potato gratin. The rich body and ripe tannins of this beautiful wine, accompany this dish perfectly.
To really show this wine’s true potential I would choose the Riedel Veritas New World Shiraz Glass.
